Flourless Almond Muffins

Ingredients

  • 1½ cups raw almonds

  • ¼ cup maple syrup

  • 3 large eggs

  • 1 teaspoon vanilla extract

  • ¼ teaspoon sea salt

Directions

  1. Preheat the oven to 375°. Grease a 12 cup muffin tin.

  2. Grind the almonds in a food processor until they are finely ground like a flour, about three minutes. If the mixture gets sticky from the oil, use a spatula to scrape down the sides and loosen the mixture. Process for another minute.

  3. Whisk together the maple syrup, eggs, vanilla and sea salt.

  4. With the processor running, pour in the liquid ingredients and process until smooth.

  5. If you are making any of the versions to the right, stir in the additional ingredients by hand, combining everything evenly.

  6. Divide the batter among 12 muffin tins.

  7. Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.

Tip

Make a batch of these wonderful treats

and store them in the freezer.

Variations

  • For Blueberry Lemon Muffins, add ½ to ¾ cup dried blueberries and 1 tablespoon of lemon zest.

  • For Banana Coconut Muffins, add 1 banana, peeled and diced, and ¼ cup toasted unsweetened coconut.

  • For Currant Spice Muffins, add ½ cup currants, ½ teaspoon ground cinnamon and 1⁄8 teaspoon each ground nutmeg and cloves.
