Vital Bites

Ingredients

2 cups almonds, soaked for 12 hours, drained and then baked in a 200˚ oven for 2 – 4 hours

1 cup coconut oil, melted

1/4 - 1⁄3 cup honey

1 cup shredded coconut

1⁄3 cup Gourmet Mushroom’s Tri-Mycogen mushroom powder or reishi mushroom powder

6 tablespoons eleuthero powder

2 tablespoons schisandra berry powder

1/4 cup slippery elm powder

2 tablespoons ashwaganda powder

1 tablespoon licorice powder

2 tablespoons turmeric

1/4 cup unsweetened cocoa powder

1 teaspoon vanilla extract

Shredded toasted coconut for rolling

Spice Versions

1 tablespoon ground ginger and 1 teaspoon ground cinnamon

~ or ~

2 teaspoon ground cinnamon, 3/4 teaspoon ground nutmeg and 1/4 teaspoon ground cloves

~ or ~

1 teaspoon ground cardamom, 1/2 teaspoon nutmeg and

1 & 1/2 teaspoons ground cinnamon (Ceres Kitchen version)

Directions

  1. Place the almonds, coconut oil and honey in a food processor and process until it is creamy. Put in a large bowl.

  2. Add the coconut, mushroom powder, powdered herbs, unsweetened cocoa powder, vanilla and whatever blend of spices you choose. Use your hands to mix everything evenly.

  3. Roll into balls using a level tablespoon of the mixture for each one, and then roll the balls in shredded coconut.

Makes 40 – 45 balls

Tip

It is recommended that you eat one Vital Bite daily. This amount provides what is traditionally considered a therapeutic dose of the herbs.
